Israeli Wine Producers Association INTRODUCES Lahat Winery TO THE U.S. MARKET
The Mediterranean wine movement continues to gain momentum in the United States, and now American consumers, sommeliers, retailers, and hospitality professionals are being introduced to one of Israel’s most respected boutique producers: Israeli Wine Producers Association member Lahat Winery.
Announced by the Israeli Wine Producers Association, the U.S. launch of Lahat Winery marks another important step in the growing recognition of Israeli wines on the global stage. Known for its refined Rhône-inspired wines and restrained Mediterranean style, the winery has earned acclaim for producing
elegant, terroir-driven wines that reflect both Israel’s diverse landscape and its evolving culinary identity.
Founded by veteran Israeli winemaker Itay Lahat, Lahat Winery is based in Israel’s Upper Galilee region, an area known for its elevated vineyards, cooler climate, and ideal growing conditions for Rhône varietals. Lahat has become widely recognized as one of the influential voices shaping modern Israeli wine
through a philosophy he describes as “Personal Terroir” — the belief that the winemaker’s vision should guide the selection of vineyard sites and grape varieties rather than chasing trends or heavily manipulated styles.
“We don’t force the wine to fit a trend or style,” said Lahat. “Our goal is harmony — wines with freshness, complexity, texture, and a true sense of place.”
A graduate of the Hebrew University of Jerusalem with extensive experience across Israel’s wine industry, Lahat has helped redefine perceptions of Israeli wine by focusing on balance, moderate alcohol levels, freshness, and culinary compatibility. His approach contrasts with the heavier, more extracted wine
styles often associated with warm-climate regions, instead emphasizing finesse, minerality, and age-worthy structure.
The inaugural U.S. portfolio showcases the winery’s Mediterranean philosophy through a collection of Rhône-focused wines that highlight both varietal expression and regional character.
Among the offerings is Lahat Lavan, a white blend of Roussanne, Viognier, and Marsanne that delivers texture, freshness, and aromatic complexity. The Lahat Roussanne offers a more focused varietal expression, partially fermented in amphora to enhance minerality and layered depth. On the red side, Lahat Adom is a Syrah-driven blend featuring earthy spice and balance, while the Lahat Syrah draws inspiration from the Northern Rhône with restrained fruit, pepper notes, and aging potential.
According to Josh Greenstein, the winery’s launch reflects the broader evolution of Israeli wine internationally.
“As one of the wineries represented by the IWPA, Lahat Winery exemplifies the sophistication, diversity, and world-class quality emerging from Israel today,” Greenstein said. “These wines resonate with sommeliers, collectors, chefs, and adventurous wine consumers looking for authentic Mediterranean expressions.”
The winery joins nearly 40 producers represented by the Israeli Wine Producers Association, an organization dedicated to educating trade, media, and consumers about Israel’s modern wine renaissance. The association continues to spotlight the country’s blend of ancient winemaking
heritage, innovative viticulture, and diverse terroirs spanning regions including the Upper Galilee, Judean Hills, and Negev Desert.
As Mediterranean cuisine and food-friendly wines continue to influence restaurant wine programs across the United States, Lahat Winery’s restrained, elegant style positions it well for both on-premise and retail growth.
